Slow Cooker Tuscan Chicken {Cook Once, Eat Twice!}

There are some things in life you can really depend on.  You know, the sun rising each morning, your baby having a blowout diaper right before you leave the house, and that crazy, needy time between your kids coming home from school until supper.  

Well, I’m glad we can count on the sun rising each morning!  And while I can’t help you with the diaper thing, I CAN help in the supper department!  I like to give myself some breathing space when it comes to meal preparation by cooking once and eating twice.

The recipe for Tuscan Chicken that I’m sharing with you today uses the slow cooker which saves you even more time and sanity!

Slow Cooker Tuscan Chicken

Ingredients
  • 2 pounds of boneless, skinless chicken breasts
  • 1 12 ounce jar of roasted red peppers
  • 6 cloves of garlic, minced
  • Salt and pepper to taste
Instructions
  1. Season the chicken breasts with salt and pepper on both sides.
  2. Place into a slow cooker (4 or 6 quart sized) that you have already sprayed with nonstick spray. Sprinkle with the minced garlic and top with the drained roasted red peppers.
  3. Turn slow cooker on to high and cook for 3-4 hours.
  4. When the chicken is done, remove it to a plate. Shred with 2 forks and season with additional salt and pepper as needed.
  5. Return to the slow cooker and toss with the accumulated liquid. It smells heavenly!

A note about chicken in the slow cooker:  pretty please don’t overcook it!  For the longest time I erroneously thought you couldn’t overcook chicken in the slow cooker, because it sat in it’s natural juices while cooking.  Whomp whomp! Slow Cooker Tuscan Sandwiches: Cook once, eat twice with this slow cooker Tuscan chicken that can be shredded and used on a variety of meals. Perfect for those busy nights to have some in the freezer!

Pile the shredded chicken on your favorite roll.  Top with sliced tomatoes.  Spread a mixture of mayo and pesto on one side of the bun.  Serve with your favorite salad.

For your second meal, enjoy Garlic Chicken Pizza.  

This is my take on the pizza by the same name from Papa Murphy’s.

Garlic Chicken Pizza made from Slow Cooker Tuscan Chicken: Cook once, eat twice with this slow cooker Tuscan chicken that can be shredded and used on a variety of meals. Perfect for those busy nights to have some in the freezer!

You’ll need:
  • Tuscan Chicken
  • Roma tomatoes
  • seeded and diced Green Onions
  • 8 ounces shredded mozzarella cheese
  • 2-4 tablespoons shredded mild cheddar cheese
  • 2-4 tablespoons freshly (and finely) shredded Parmesan cheese
  • 1/2 cup ranch dressing
  • 1/2 teaspoon minced garlic

Prepare your favorite pizza crust.  I almost always use this one. In a small bowl, mix the ranch dressing and minced garlic. Top your crust with the dressing and garlic.  I don’t use all of this, but you can use however much you like! Top with shredded mozzarella cheese.  Evenly dot with the chicken.  Sprinkle with the tomatoes and onions.  Garnish with the remaining cheeses.  Bake according to the directions for the crust you use.

You’ll notice that I didn’t include amounts for the chicken, tomatoes, and green onions.  You can use the amounts that you enjoy!  

Oh, and don’t forget, you can freeze the chicken before or after you cook it, too!  It really is the perfect solution for busy meal times.
